To begin, try this Vegetable Breakfast Medley:
Slice several carrots into a steamer and steam them while you quickly slice up some cabbage, (Savoy and red cabbages are both very good) some broccoli and sliced onion.
When the carrots are tender add the cabbage, broccoli and onion and steam them together for a few minutes until the broccoli turns bright green.
Test the taste of the broccoli, when it's almost done, quickly pull the steamer from the pot and turn it over into a large serving bowl. The vegetables will keep cooking while they are in the serving dish.
Sprinkle generously with Oregano, Garlic Salt and Extra Virgin Olive Oil and toss. Serve with a slice of whole wheat bread or toast. Magnificent! It tastes wonderful and keeps you feeling filled for hours.

Hard Boiled Eggs: Bring eggs to a boil and boil for about two minutes. Cover the pot and let it sit for about seven minutes. Remove eggs and hold under them cold running water for a few moments and they will be easy to peal.
Variations: Use different vegetables such as squashes and zucchinis. Vary the spices you add - try thyme, rosemary, basil and celery salt.
